MICHAEL BOIVIN
After working in the best award-winning Parisian pastry shops and in renowned hotels and restaurants both in Italy and in France as a pastry chef, in 2015 he founded Fraîche, mentioned in several culinary guides. In March 2020, he arrived at the Rosewood Castiglion del Bosco, a 5 * luxury hotel, where he offers guests his - sweet - creative flair.
MARCO RISPO
Born in Naples, class of 1983, Marco Rispo has continued his passion for cooking since he was a child. With experiences in various Italian starred restaurants - including Don Alfonso 1890 - and European ones, in 2018 he signed the restaurant Le Trabe in Paestum, 1 Michelin Star. In 2021, he was also awarded the Green Star, for his contribution to the enhancement of the local Campania product, in a concrete reworking of the " kitchen of memories " .
Gennaro RUSSO
After his apprenticeship in the Don Alfonso 1890 restaurant and Paris in multi-starred restaurants, including Lasserre and L'Ambroisie, working alongside Massimo Bottura at the Osteria Francescana in Modena. Le Sirenuse in 2014 as a sous-chef where he developed a culinary philosophy based on strong Mediterranean influences and a focus on local products and traditions.
TOMMASO FOGLIA
Naples in 1990, he is a young promise in the sector: his parents owned a bakery; therefore, he became passionate about the world of leavened products as a child. Since he was a teenager, he trained in exceptional restaurants such as Don Alfonso 1890, from which he then decided to devote himself full time to pastry. Now running various restaurants in Italy and abroad. In 2022 he was appointed Pastry Chef of the year and was called as a judge for Bake Off Italy.
Pietro Sgaramella
Executive Chef of Masseria Calderisi, before arriving in Puglia he collected experiences in numerous Italian multi-starred restaurants, among the most renowned in the country, including the 3 * Michelin Le Calandre di Alajmo and the 2 * Don Alfonso 1890. He currently offers a traditional cuisine - made up of strictly km0 ingredients - enriched by his lively flair .
